With his forty-fourth film, Menus Plaisirs - Les Troisgros, documentary filmmaking legend Frederick Wiseman details the lives of the Troisgros family, who have for four generations run Le Bois Sans Feuilles (The Forest Without Leaves), a restaurant in the Burgundy region. Instead of showcasing the restaurant’s showy interior (it holds a threep-Michelin-star-rating), famous patrons, or finished dishes, the maestro silently captures the process leading up to the presentation of the cuisine at the guests’ tables. In depicting discussions around selecting the day’s ingredients from the vegetable market, cheese processing factories, vineyards, and vegetable gardens, Wiseman shows us the interactions between the family and the farmers and chefs who work together in harmony like members of an orchestra, crafting dishes. In the summer of 2020, Wiseman happened upon Le Bois Sans Feuilles while searching for nearby restaurants to visit to thank his friend who had invited him to his summer home.
